Raspberry Wheat is done, and mighty tastey! (pics of THE beer)

I also did a split batch recently of a honey dunkel wheat. One half got raspberry extract. I have to mix them at serving to reduce the raspberry. In short, stay away from the extract or add by the ml and taste often. Still when mixed it comes out good, but not great.

    Infusing a Vanille Bourbon Porter

I have D. Conn's imperial vanilla bourbon porter in a primary (modified slightly based on locally available supplies): 5 lbs Pale Malt (2 Row) UK (3.0 SRM) Grain 52.63 % 1 lbs 4.0 oz Munich Malt (9.0 SRM) Grain 13.16 % 1 lbs 4.0 oz Pale Malt, Maris Otter (3.0 SRM) Grain 13.16 % 12.0 oz...

How long will a cyser ferment?

Nooooooooooooooooooooooooo............... Time to buy a new 3 gallon carboy, not enough patience to wait another 4 weeks to get the imperial going.

    Hefe confusion

    1) What was the temp at the reading? You have to adjust. 2) Test your hydrometer to make sure it is accurate. 3) What kind of yeast did you use?

How long will a cyser ferment?

Actually, this took off right away with a nearly constant stream of co2. It is not at about one every 5 seconds, 29 days! I made a modified batch of fresh press AJ Apfelwein about 2 months ago (added honey, cloves, cinnamon) that ran a little longer than an ale, but nothing like this. I...

How long will a cyser ferment?

I made a batch from a local farm. 3 gallon apple cider, untreated and unpasteurized, 3 pounds of honey. Nottingham yeast. Anyway, it is still chugging away going into the 4th week. Never had anything go this long, or even close. Anyone familiar with these or experienced similar? Not so...

    Erdinger Hefeweizen clone...

That's the spirit! Be sure to revive this thread and let me know how it turns out. Erdinger is a clean wheat, vs. fanz and weihen. Keeping those ferment temps under control like he recommended should help control the bananas in your beer. Personally I love the banana and clove, but can not...

    Erdinger Hefeweizen clone...

A 90 minute boil? 5.75 boil might, likley will, come up short. What is your efficiency set at? 5.3% from 9.5# grain seems pretty efficient. Not that the guidelines are set in stone, but perle is listed as a bittering only. Not sure what the 13 minute boil would produce. Be fun to find...

    Erdinger Hefeweizen clone...

Crystal should add malty sweetness. I would suggest sticking with a good weiss yeast for fermenting and grow the culture for bottling if you like. WLP300 or Wyeast 3068 or 3333. Although the carbing will likely come from both yeasts unless you filter or kill it before the bottling. I just...

    Erdinger Hefeweizen clone...

Please don't take my comment the wrong way, I was just having fun formulating with you. I also wanted you to find a spelt supplier for me. ;) Pre-qualifier, there are many around much better at conversions than me so I will leave that to them and instead explain where I would start. If it...

    Erdinger Hefeweizen clone...

With all due respect, that feels like a step backwards from where you were. Color and IBU seem off, and Jackson's hop bill was better. A heck of a lot easier though. I am sure it will taste good, but not as close to a clone as before.

Thoughts on Oats in a Northern Brown

Yeah, pulling out Dream Academy is a bit dated IMO, funny though.

    Legal Question?

I get such a kick out of stupid perp's who say, "how did this happen". How about someone rear ends you and the Highway Patrol wants to check you brake light wiring? You have to change a road-side flat so a Trooper angle parks behind you for safety concerns? You know you have something illegal...

    Legal Question?

No it is not legal in GA, production for home consumption is legal... 3-5-4 Production of malt beverages by a head of household for consumption within own household. (a) A head of a household may produce 50 gallons of malt beverages in any one calendar year to be consumed within his or her...

FDA C&D letters to Caffeine/Alcohol Drink Makers

Moonshot is 4% ABW and has the 3/4 the caffeine of a cup of coffee. And lots of regs have overstepped the original intent. From what I am reading it is not about advertising it, it is about making and selling it. Just so long as selling makes it into the language, no worries.
