    10 bucks too much?

    We're not so lucky here in the UK, my HBS has brand new cornys for £89.95 ($170). Ridiculous no? Cheapest I've found them online was £60 ($115). You would have thought they were gold plated kegs. Havn't found an American website that delivers to the UK either. Anyone from the UK know...

    How many gallons of EdWort's Apfelwein have been made?

    ollllo I think you made a mistake in your calculations too... ummm Schlenkerla's post counted 254.5 vtbrew contributes 15 gal in total, so that comes to 269.5 Add tron's 5 gal and we have 274.5 Juuust cleaning up :) Man, that a lot of apfelwein *^_^*

    Primary (5 days) has brown stuff on surface

    I have it on pretty much every brew, it just seems to be the residual krausen that is just that little bit more stubborn that the bulk of the krausen. Nothing to worry about at all :)

    Buying Secondary - what shoud I get?

    I'd definitely recommend Better Bottle, I bought one without the spigot since that practically doubled the price. Although a spigot would be convenient, I find a carboy cap works just as well. Makes for easy racking :)

    Cider recipe

    If you would prefer a sweeter Apfelwein I've read that people have used brown sugar in replacement to corn sugar. And I'm pretty sure table sugar would be fine, when making beer it imparts a cidery flavor but I don't think this would matter... since you're going for that kind of flavor anyway :)

    Removing existing labels

    Old speckled Hen bottles have been my worst so far, the labels seem to be made out of plastic/foil which doesn't rip off like normal paper labels, even after a soak. And when I did manage to prise a corner away, the glue made sure I got no further. I just gave up and bottled anyway.

    Siphoning

    I've always started the siphon using my mouth and have had no problems. I know that it's considered a mortal sin here, but until I get round to buying an autosiphon or a batch gets horribly contaminated, I'll carry on :) It's just easier IMHO.     Secondary Fermentation

    You could also refer to the Secondary as a "Clearing Tank". You just take the beer off the yeast layer in the primary so more yeast can fall out of suspension in secondary, making the beer clearer. It's a matter of preference really, Since I've used a secondary my beers have been a lot clearer.
