    I'm bitter. Too bitter.

That's a good question, and to be fair my taste is fairly all inclusive; I'm a fan of anything hoppy and quite like a decent bitterness, as long as the overall profile is balanced. Summer Lightning, Proper Job (Cornish brewery) and a few others spring to mind. On a side note, do any of our US...

Great reply, thanks! I have considered looking at buying water in, so might try that with my next brew!

Thanks John. It actually seems to have settled a tiny bit already, so I think I was just being overly worried and not using the good old homebrewers best tool...patience! Fingers crossed it comes good in the end and the bitterness mellows out a bit :)

    I'm bitter. Too bitter.

Thanks guys, some good replies. Sadly I don't know of any homebrew clubs locally (south coast of England, near Chichester). Fair points, and actually I've loved making the mistakes as you learn from them for next time! Merry Christmas to you too!

    Hoppy APA extract kits UK

Hi all, so my first couple of brews have been a Block Party Amber Ale which came out at 3.41% and a Dead Ringer which I've just transferred to secondary and seems to be at 6.41% after two weeks primary, which I'm very pleased with. Both were from Northern Brewer imported through a UK website...

Dead Ringer IPA from Northern Brewer?

Mine went from 1.061 to 1.012...pretty pleased as this brings it out at around 6.4%...not bad!

    Finally joined up; hi everyone!

So, I've been lurking for a while whilst doing my first couple of brews, and have found the threads on here to be really helpful! I'm a 34 year old guy from England who enjoys drinking beer, and so far have really enjoyed brewing my own as it's come out surprisingly well given the amount of...
