    Have other people tried your beer with the same result? Are you using beer kits with corn sugar by any chance? Maybe try a little higher OG and IBU and maybe try to increase the body of the beer with carapils or something.

    All of the increased heat after boiling is directly going into energy for evaporation, so yes increasing the heat would increse the evaporation rate. I usually always turn my gas down just enough to get a decent boil to save gas, you need to account for these changes to reach your final volume...

    What is your serving temperture? I usually keep mine around 7C. Do you get yours crystal clear or just semi-clear?

    How long has it been in bottles? Is it still very cloudy? If its bottled wait at least a couple weeks, then at least a few days in the fridge and try again.

    Hot break proteins and such, completely normal. You can try to avoid getting them in the fermentor but it's not a big deal if they do. Ferment away :tank:

    If it truly is 1.16 I would be very concerned. Did you taste it to see if its unbelievably sweet? That might give you an idea if your hydrometer is being wonky.
