    How important is topping off?

    I use 30L(7.9g) & 20L(5.3g) Speidel fermentors & my typical batch size 4.5 - 6gal -- their is always plenty of headspace as I never top off. ZERO issues ever [emoji111] Cheers & Good luck [emoji16]

    I've used a 2L charred American oak barrel for aging some of my faux ice cider. Tasted & smelled fantastic...like a low ABV (14%) bourbon. Cheers [emoji111]

    Importance of cold chrashing/pasteurizing.

    With my go to yeast - D47 (& sometimes S04) I routinely cold crash & then store my cider in the fridge -- except for some bottles I carbonate at room temp. I'm able to "stop" my fermentation at desired SG this way & easily clarify my cider. I prefer a sweeter cider & this protocol works very...

    How old was the yeast? Pinch entire pak? Nothing else added? Room temp it's fermenting in? Welch's was the juice brand...w no preservatives?

    Apple Cider Gone Wrong.

    Try a yeast like S04 that cold crashes well & has lower alcohol tolerance - 10% 2nd the FAJC rather than sugar....more apple flavor & much less harsh [emoji106][emoji111]

    My fav yeast! Low nutrient reqs...leaves great flavor...alcohol tolerance 13-14%...cold crashes well & leaves caramel syrup like lees [emoji111]
