    New Michigan Brewer

    welcome. wow, 1 day in the bottle and you're already taste testing. The first batch is a killer to wait out, but it gets easier the more you brew - start stocking up on bottles now so that you have a variety of batches to sample from, and always have 'something' brewing in the fermenter.

    I need a great fool proof 1st kit

    My first was a Brewer's Best Classic English Pale Ale. It was simple and quick - 14 days in primary, and after 4 days in the bottle (i was awfully impatient) it was already carbed and tasted pretty dang good.

    ed wort's apfelwein Question...

    Try checking in the Cider forum. I just recently tried a bottle that I brewed at the end of January, and only now is it close to 'worth drinking'.

    so it cleared up in the last few days - can see right through it. Drank a pint of it last night - it still smelled slightly of vinegar, tasted like mostly nothing. Guess i'll just bottle it and revisit in another few months.

    Didn't this go waaay too fast?

    I got tired of constantly sanitizing and wasting samples, so i tied some floss around the hydrometer, sanitized, and left it in the carboy to float around. it keeps attracting bubbles that collect on the surface, but i can lift it out with the floss and deposit it back in a clear spot if need be.

    nope, not yet, but again, i'm not sure how clear it's supposed to get with the 3068 yeast.

    can anyone give me an idea of where 4 gallons of AJ with 1 pound of corn sugar (o.g. of 1.056) should finish using wyeast 3068? i'm getting impatient with mine, which has been hovering around 1.004 for a good 3-4 days now.

    Xingu is the first and only beer that actually gave me a migraine after drinking it. It's still one of my favorites though.
