    Well, we have been in the primary one month now.

    Been EXTREMELY busy lately. Haven't had time to bottle, going to do so tomorrow. Anywho, the beer sat in the fermenter about 4 weeks, was done fermenting in about 7 days. Think this will be any sort of problem??? It is a honey brown ale.

    Beer gets better with age....but how bout with 10 YEARS of aging???

    Tried em both, and you know what?? BOTH WERE AWESOME!!!!!!!!! No bland or nasty tastes at all. Definitely had a bit of sentiment, but home beer does anyways. Needless to say, I was amazed and surprised. Both were GREAT! I couldn't believe it!

    Cheese- Thanks for the FYI. BTW, let it age for a few weeks yet BEFORE bottling?? Was planning to bottle probably next Friday (would be 2 full weeks fermenter time) I remember drinking a sample of the wort BEFORE pitching the yeast and it had a really nasty aftertaste even then. Came on here...

    orpheus, it's hard to explain. But i would say YES, it could be described as a band aid taste quite possibly. Like i said, just like disinfectant, and it doesn't go away, it really sticks in your mouth. Not a good aftertaste AT ALL. Band aid could very well be a way to explain it! Uh oh...

    I did sanitize and rinse out the hydrometer flask before sampling....MAYBE i used to strong a mix (sanitizer) for that, as i did just guess at the amount and just put it in my sink. i did rinse it out good though but am just hoping maybe it was in the flask and not the entire batch.     i am getting worried, 10 minutes later, i still have this VERY weird and not good taste in my mouth. It tastes almost like soap or disinfectant of some sort. I used BBrite for my sanitation part and rinsed everything pretty darn thouroughly....so i thought anyways. Hopefully it will still...

    I cannot even work the BUCKET..WOW.

    when sealing my bucket, i take a little hammer with me and SLIGHTLY tap down all edges of the bucket/lid to make sure it is sealed. To get off, you just need to be a man.

    The coolest thing happened to me today. My grandfather died about 6 months ago and today I went with parents to help them clean some stuff out of his house. I happen to look in a top kitchen cupboard, and what do i find???? I find about 6 bottles of "holiday ale" that my brother home brewed...

    Thanks guys. Yeah am not even gonna THINK about racking until probably Monday at the EARLIEST, that would give it 10 days in the fermenter. Not doing secondaries yet.

    Put it in the fermenter in Friday afternoon. Was bubbling by Saturday afternoon. Was all done bubbling by Tuesday night. Was constantly around 66 degrees. Sound normal??? Will start my two day hydrometer readings tomorrow (Thurs.)

    After beer has been carbonated...

    I have always been told for the first 2 weeks, the warmer the better, like around 70 degrees or so. The following 2 weeks after that, if you can keep it a bit lower, like around 60 degrees or so, GREAT! 4 weeks, in the fridge and down the hatch.

    Should I rack to secondary?

    Yes, they say secondary needs to be MORE airtight then the primary, so do not use your plastic pail for the secondary.
