    You could theoretically set up an ad hoc network between the pi and an external laptop (either wired or wireless)... rather than being tied to your brewery having network connectivity... which is understandably a concern of yours if you are mobile. I don't know of anybody using a touchscreen...

    If the heat sinks are externally mounted I really don't think you'll ever run into problems unless you have a straight up faulty SSR. Definitely a good idea to place a temp sensor between them or something just in case. I'll be taking this approach when I redo my panel in the near future

    I think you're better off just using a single DPDT master power relay for both hots. If you want you can make your raspberry pi bypass this master power relay and have it's own switch.

    That's a lot of energy moving through the element selector switch. I'd either use a relay there (what I did originally), or just use the element selection switch on the GPIO lines (what I do now).

    I don't think it should be a problem as long as the SSRs are running well below what they are rated for. That being said, a fan is not a bad idea... Sometimes a single large heat sink is used for several SSRs, so the heat sinks being next to one another or touching I believe to be a none issue.
