    You could also try tasting your wort before pitching. If the acidity is there before fermentation, then there is definitely an issue with your mash. If the acidity develops as it ferments, then I would look elsewhere (tho mash can't be ruled out).

    Agreed. The IPAs have worn thin on me too. I knew on the first sip of the IPA I brewed for my first batch that it was an experiment that I would not be repeating. I think it is a forgiving style that people have worryingly taken to a silly extreme. +1 in your call for more balanced beer recipes.

    I don't know if there is a specific reason for it, or if it is just convention, but I don't think I've ever seen mains power wiring soldered. I can think of a couple of reasons why I wouldn't want to solder it. Everything I've seen uses wire nuts, even the commercially preassembled stuff.

    It is highly unlikely that you have two "blown" GFCI. Did you check to see if you have a genuine ground fault? It may be that they are actually working as designed.
