    Sounds great. I would like to try a traditional version with the weiss yeast but I am not sure I would want a whole batch. Your variation sounds great.

    I did and it is very nice. The Deltas give it a unique and pleasant character, but I would not use the same hopping schedule. I would eliminate the 20 minute and the dry hops.

    I would cut the coffee malt back by an ounce or so. I might put in a small amount of roast. I would also consider some special B or 120L crystal for that dry fruit note.

    About $28 a bottle to New Mexico by ground mail. I don't think so. That is basically the price of a bag of grain. I will taste it some day. They are asking nearly $10 for a 22 ounce bottle before shipping.
