    i'm brewing a porter now and used danstar's nottingham dry ale yeast. fermentation was the most vigorous i have ever had in a beer. very happy with the results of this yeast so far.

    you can either put some sort of mesh cover over your siphon tube or valve, or, just pour the cooled wort through a strainer into the primary fermenter. i get excellent results just straining the hops out into a primary. or you can use hop bags. this is a pretty easy problem to solve and all...

    i think it's possible to brew with baker's yeast, but it doesn't do as well as brewer's yeast in the presence of alcohol. that pic was taken at the end of fermentation when alcohol was very much present in the beer. so that can't be good. it's also possible what you see in that pic has nothing...
