    Alternative to US-05?

I have used WLP051 California Ale V for the variation I did of the Dogfish Head 90 minute and it came out extremely well twice.

Change in Vacation Destination: St. Louis

Pappy's BBQ, good place, but when they do sell out of items, thats it for the day. Pappy's Smokehouse | St. Louis BBQ | Memphis Style BBQ | Saint Louis Barbeque | Welcome To Pappy's Smokehouse

    Molson shutting off the taps

I had a neighbor 15 years ago that worked for a distributor and he was able to buy Corona from them for .20 a bottle.

The prices are very reasonable. I bought 3 pounds myself recently for brewing my big IPA's. From weiging it, the one bag was only .5 oz heavier, the Amarillo and Columbus were 1.5 oz heavier.

    Just don't get it

If you had it outside Chicago, it isn't a real Chicago Style Pizza. Sadly Uno Pizza outside Chicago commonly gets mistaken as real Chicago Pizza. I would rather go to Pizza Hut than to eat there. Gino's East, now thats great pizza. However like Pizza, beer is a matter of preference. I...

Is there a good beer store in your area?

For the Chicago area I go to Binny's Beverage Depot. Good thing for this month is they have alot of beers $2 off a 4 or 6 pack. Been picking up some Bell's beers and trying out some others.

    Warm yeast pack

I had a pack come in that was swelled a bit before because UPS delivered it to the wrong house. When I did get it, I was able to pop the nutrient pack a few days later (best to do this a day before brewing). If it swells like a football then your fine, if it doesn't then call up and you will...

It's not always about the alcohol

I vary between the big IIPA's and the Amber and Scotch ales that sit in the 4-6% alcohol ranges. I also brew a couple mid level 5-6% IPA's. Some events you want to sip a beer and not be done for after a couple. I like my brews on Memorial Day, 4th of July, etc and to share with others. At...

    Hallertau Hop fields destroyed

May be time to place an order and freeze some of this hop. I use it in my amber ale and was looking at tweaking the recipe to get it more hoppy.

How many primarys do you have?

I have 2 buckets for my Primary, 7 glass carboys for secondary and a 6.5 that has a Ed Wort Alpha going in it. My space is limited as the wife keeps reminding me. If you end up brewing everyweek, you can build up a stockpile. Due to my job I was only able to drink on brew day with my...

    Brewer's Best Irish Stout

The Russian Imperial Stout is in a glass carboy as a secondary.

    Brewer's Best Irish Stout

I have a Russian Imperial Stout that has been in the fermenter almost a year now and my porter I usually leave in the fermenter 2-3 months. The porter came out very smooth and some of the stouts and such will even say on the instructions an extended, recommended time to let them mellow...

Clone Beer Dog Fish Head - Midas Touch

I typically leave mine in the primary for 2 weeks, then move it over to the secondary. Depending on the brew I leave it for 2 weeks. For a high grav IPA with 6-10 oz of hops I leave it for 2-4 weeks in the secondary. Typically if I am dry hopping I'll go 2 weeks in the secondary before...

    Ska Modus Hoperandi

I'll have to look for it at the Friar Tucks next time I pass by Savoy, IL. Alot of the liquor stores though keep most beers on the shelf in limited quantities and hope they sell quickly.

For a 5 gallon batch. What is the exact breakdown per ounce of hops at those additions? Sounds like I need to make this beer.

Does anyone have a recipe for this beer? Or at least the hops that they use to make it?

    Blew my top

I didn't have the lid blow off, but I have had it bubble out through the airlock before. Always messy and the last one my wife had to clear the airlock and re-sanatize it.

I started out with 2 buckets and 2 carboys, now I have 3 buckets and 8 carboys and beers at all levels of readiness.

About to deploy for a year

I picked up an Imperial IPA Extract Kit from Midwest Supplies and in the instructions it says to leave it in the Carboy 4-12 months for aging and bottle for a min of 4 months. Higher gravity and hoppy beers are good options. Something like a Hopslam type beer so when you come back and it's...
