    RIS swap ~ Poindexter's brews

Just had my last bottle of this. The harsh roastiness has mellowed considerably. The beer is much more drinkable now, and quite delicious. A wee tad dry IMO, but a dynamite beer. Thanks again KD

American Pale Ale Lake Walk Pale Ale

Dude, I look forward to hearing about the DF50. I gave up on US-05 on this beer for the same reason. I have found more consistent attenuation with 1056 and 1272. The beers come out better for me.

    Spark Ignition for Brutus

Yes, that is correct. It's a glorified toggle switch.

    Spark Ignition for Brutus

No need to worry. You can use 120V switches; the output is just an SPDT switch, which can carry either voltage. Just use a 24V 40VA transformer into a barrier strip and wire your switch. Herre is a photo, but I'm not sure if it helps.

    I'm Thinking... 09/09/09 Barleywine

I just pulled a draw off this after 8 days on Chinook/Cascade and American Oak Spirals. The dry hopping improved the beer considerably IMO, and the oak is just peeking through. Two more weeks on the wood and I rack and carb.

I think it's a different Vermont person, but you are right; a guy can hope!

    I'm Thinking... 09/09/09 Barleywine

I would leave it random. I would hate to see some dude in Vermont miss out on some fine California hooch, and vice-versa. What's with the blue star in NE by the way?

American Pale Ale Lake Walk Pale Ale

Yes, I agree. Freshops has them Dude. I'm kind of embarrassed to say, but I got another medal with your recipe! 3rd out of 42 entries in category 10. I used Maris Otter, WY1272, and all whole hops in that batch.

    Weihenstephaner Original - Recipe?

To tell you the truth, I think this beer is damn fine and hopped perfectly. I'll back off the hops a touch, but not 25%! Competitions are funny: I scored a 45-46 (highest in contest) with a variation of Dude's Lakewalk in this same contest and only scored a 3rd behind some 31-32 point beers...

    Weihenstephaner Original - Recipe?

Sorry, I missed this before. I was actually a touch high at 1.058/1.012 and lagered for 8 weeks. I was fortunate (or unfortunate) enough to have a rare BJCP Master judge this category. Here are the results for a 2nd in category. I actually like the hop balance but will try to brew closer to...

    Weihenstephaner Original - Recipe?

No, i did this with no-sparge. I was planning to do a decoction batch using the same recipe for comparison, but haven't gotten around to it yet. I did a ten minute rest at 130 and ramped to 154. Mash-out infusion to full volume. KD

Yeah, I got the aroma hops idea from YOU in an earlier post!

    Weihenstephaner Original - Recipe?

Just scored a 2nd in Quaff's America's Finest City comp. with this beer. Have not seen the scoresheets yet. Thanks for all the tips guys.

American Pale Ale Lake Walk Pale Ale

Damnedest thing. I ended up with 1.054 to kettle today doing a double batch sparge. I'm calculating 85% efficiency and 1.074 OG. I Usually only get about 65%, so I don't know what the heck happened and I checked with Hydro and Refrac. Anyway, I am beefing up the IBU now to make a Lake Walk...

I use mine the same day but you should store in a paper bag if you are resting it.
