    I ended up going with the M20, currently sitting at 72°. My only problem with MJ yeasts is the extended lag time, but it's what my LHBS had, and they generally give me good results. I'll hopefully see signs of fermentation by tomorrow.

    I've been considering doing a Cali Common, which I know is traditionally a showcase for Northern Brewer, but I have a bag of Super Styrian, and I found some Pekko on sale, both of which seem to have fairly similar flavor descriptions to NB. Can anyone speak to this one way or the other? Thanks!

    I brewed a Bohemian pilsner (3B - Czech Premium Pale Lager), but instead of Saaz I went with some homegrown Sterling, because Sterling is frequently listed as a Saaz substitute/replacement.     Here's an odd question: should the probe generate heat? My basement is sitting at around 59°-60°F, but when I plug the probe in, the temperature inside the tee increases to 67°-68°, which I have verified with another thermometer. Is this typical?

    Interesting. So you just plug/unplug repeatedly until it eventually corrects itself? My probe is from The Electric Brewery, but I imagine they're similar. I haven't tried repeated back-to-back plug/unplugs, but at this point it's worth a shot.
