    Why extract?

    Cost/Time/Space limitations, easy as that. The time to brew extract is so much less than that of AG. And the cost is much higher. Extract brewing is also great if you live an in apartment where space is at a premium.

    If you drill through the door you shouldn't have a problem. I just used a regular old drill and drill bit with no problem. Lesson learned was to mark off all the spout locations at the same time, otherwise they may end up crooked. Depending on the amount of kegs you plan to store in your fridge...

    That would be correct. The heavier (higher gravity) liquid is on bottom and the lighter (lower gravity) is on top where you took the sample from. Ran into the same problem before.

    Yes. I Usually put in a day or two before I keg. Do not do this before racking to a secondary. Cold Crashing causes the yeast to become dormant. Not something you want if you are still fermenting but would want before bottling or kegging due to it making the beer clearer or in this case causing...

    Try cold crashing the night before, this will cause "floaties" to fall to the bottom. As for the bottom sediment just hold the end of the siphon above it.

    Clean them. Its the same as buying new plates. You want to wash them before eating off them.

    There is a time and place for all beer. When I am going to be doing heavy drinking, BL/ML/CL is fine. When I want to kick back and relax I will go upscale. One thing I have noticed is that after brewing and drinking higher ABV beers I can really pound CL/BL/ML like the water they taste like. :D

    New to kegging, if you do this do you need to sanitize the out line or you do you hook on as is?
