Who all is making ice cider here, recipes?

no, that is not the difference. the juice (or sometimes apples) is concentrated by freezing and ice removal prior to fermentation. Icewine, but with apples.

Who all is making ice cider here, recipes?

well, I mean, there isn't much to the "recipe" ...As high a % of McIntosh as possible, over 50%. Honeycrisp most of the rest. There will be a few percent, <10%, of something very acidic that pleased me aroma-wise in every batch. Success with Northern Spy and Ashmead's Kernel in this the last...

    How to back sweeten mead

well I hope you didn't go buy 21 cups of honey. 1.33 gallons of honey is definitely more than you want here. using your volumes, if 1 tsp in 4 oz was what you're looking for, then you need 3.33 Cups of honey for 5 gallons. By the way, how does it taste after two years? Was this all...

    Star thistle honey

it's tasty. a few people hate either the smell or flavor, but it's a good one IMO. Vaguely herbal/grassy, occasional fruity note that reminds me of lemon, definite anise. I'd probably water it down about 3 to 1 and taste and decide if it is for you. good luck-- --Michael

HA. I got one of those in Grand Rapids NHC. One place higher and I would have had Gold and Bronze. Yeah that's not something I want to know.

    The 2016 NHC - Results/Speculation Thread

I can't imagine ever checking "send me the recipe" with a beer I scored a 30. Hmm. as for the scores, 37/40 is a fine score and often medals. Hell I gave the Meadmaker of the Year a 39, super cold first of flight. I'd probably have gone 41/42 based on how it tasted in the medal round. as...

Three beers quickly stuck out to me at the BOS round. The other two I had to protect/argue for a bit, but I don't think I ever heard anything non-complimentary said about yours. Congratulations! cheers-- --Michael

I was head judge on that flight but didn't get to judge any bochet, sorry. There was at least one other in that flight I believe should have gotten a medal based on my tasting it later, but I can't do anything if I didn't judge it and it didn't get sent to mini-BOS. I've suggested a bit...

What was the best beer you ever brewed?

It was a Vienna lager. Nov '14. I entered it in NHC '15 where it was scored 15.5/50. It later scored 38 on its first birthday and a still-decent low 30s last month when used in a tasting exam. (It) happens.

Survey of Award Winning BJCP Ciders - Please Submit Yours!

Don't think I've ever been called humble before, ha! I'm bringing a different Heritage blend to NHC but close enough. Think I've got 9 ciders and two cysers in the car (left yesterday) so find the guy surrounded by 5'10" bearded overweight fruit flies.
