    Busy day - no brewing

I just finished a couple hrs of work - bottling my Vanilla Cream Ale (tastes great) and racking my Black Currant Belgian Wit to tertiary & off the fruit. It had been on the fruit for over 2 weeks, which I know is bad, but I couldn't taste any astringency and lemme just say Holy F***ing S(**...

    Canning

now I dont have one, but I can totally picture a "SWMBO" saying something along those lines :D. I dunno man, I have neither justification nor cash to go into canning, but I think it'd be pretty awesome - like, I agree bottles imply quality - but when was the last time you saw someone who canned...

    Big Brew Weekend

You all and your SWMBO's... I hadn't brewed in a good long while until today (school, I know it's a horrible excuse), but my goal was to make the simplest, cheapest pale ale I could and see how it turns out. 6.6 lbs of LME, 3 hop additions and 1 dry yeast packet later, I'm feelin' optimistic...

    Canning

Well, I'm about to get into kegging, and I'm not about to drop the investment to start canning, but I was wondering if anyone on here is doing this. Is it expensive? I haven't read any literature on it but I'm sure it's possible. Holla back

    Coffee stout

If you have access to past issues of BYO then check out December 2002's issue. a good rule to go by is to replace the amount of high roasted malt called for in the recipe with coffee, oz for oz. (If you're adding beans - espresso or liquid coffee would be different) My recently bottled java...

    Just Got My New Equipment!!!!

lol I was going to say the same thing. Just make sure your sanitation is thorough. Don't half-ass anything - the first few batches the temptation is there but you have to really be anal about it - and don't forget to clean your equipment really well after everything's done! Sorry if it...

Most helpful item in your brewery

Yeah, I've got one o those too - Lactose is the Best cutting agent I've ever found! ;)

    the "quaff"

yeah man, it's a useful addition. I agree though, that sipping is still my primary method of consumption I like that, it's something that I had subconsciously noted but not actually thought about. Quaffing is probably not the best way to experience a brew for the first time, but for more of...

    starter blow-off

I don't make starters (don't throw anything :( ) But a related question - how long do you guys leave a blow-off tube on the primary? The whole way through? I just put my belgian wit into secondary and added the blackcurrants and Hot damn is it goin @ it. There's a blow off tube with a...

    the "quaff"

OK, so my friend told me his dad's so-called proper method of drinking beer. And it goes a-somethin' like this: 4 Large gulps. (or maybe a couple more.) He calls it the quaff. Supposedly this is the most thorough way to get the flavor. Seems a little excessive to me - although I'll be...

How old were you when you started?

Walker - how did you deal with bottles? Did people actually return them to you? Or were you constantly raiding recycling bins?

    Rinsing with tap water?

For what it's worth, I've used the dishwasher to sanitize the bottles on my last few batches. I haven't had any problems - which isn't to say that it's 100% effective - but I'm going to continue relying on it until I think that it's caused a problem.

How old were you when you started?

Ditto man. When I go to a party & people are drinking the hell out of some natty lite... I just laugh at them with my 1 liter flip-top bottle of homebrew :p But you've got to give some away! That's half the fun of it for me

    Caramel cream ale?

hey Cheesefood - you added the lactose @ bottling? I haven't racked mine to secondary yet, but I was planning on adding it then. What prompted the switch? Let us know how it turns out

Sugar, Malt, Hops, What's the right combination?

well, there are some different schools of thought on this. My take on it is, who really cares what some numbers on your hydrometer say - bottle it, condition it, and Taste it. What ultimately determines the "right" ending beer consistency is Entirely up to your taste buds. Unless of course you...

Sugar, Malt, Hops, What's the right combination?

if by "good to go" you mean ready to bottle... check your hydrometer readings 3 days in a row. If they remain unchanged, you should be o.k. to bottle. If you rack your beer to a secondary fermenter, you can let it chill for a while and forget about it while it ages. That way, you never...

Sugar, Malt, Hops, What's the right combination?

a damn good rule to go by is to use the least possible amount of corn sugar. It can give you a cidery sweet flavor that you don't really want in your beer. If you must use it there's a ratio you're supposed to stay under (maybe 20% of the grain bill? Somebody on here will know.) It may be...

    2 brews @ once!

Damn Andre - triple all grain?! That's intense. I just did extract w' some specialty grains. If someone hadn't stolen my ipod I'd be upgrading to all grain right about now, but it might have to wait till christmas.
