    You pasteurize to kill off the remaining active yeast and avoid bottle bombs or bottles exploding.

    Wasnt thinking of carbonating. Was going to stabilize in secondary and backsweeten to taste. May use apple juice concentrate for that. Then age for a few months.

    bottle question

    It's actually a process used in canning. You're creating a vacuum by heating the bottle and liquid inside. Thinking about it now it's more work then what i was going to use......mason jars! And its going to be awhile before it's ready to bottle. Just got it going Tuesday.

    Im thinking of recycling some beer bottles when i bottle my cider. They are the twist off caps. Was thinking of heating the bottle with cider in it and cap on loose. Then once the bottle is warm twist the cap down all the way. Good idea or bad?

    While I've never done it myself i have seen a youtube video and the guy used 2 litre bottles. Turn your freezer as low as possible if you can. The alcohol should separate towards the bottom. Then turn them upside down over a clean bowl. I've had applejack before and found it to be rather tasty.

    Question on first batch of mead

    What i do is set the honey in the sink with warm water. Warm honey pours better than cold. Also mix is with a little warm water. The top off off the carboy with cool water brings the temp down. It shouldn't be ruined, just stir it up longer.

    Thinking of trying to make mead

    I just started a batch yesterday. 4lbs of honey to a gallon of water, juice from 4 Clementine oranges. When I pull off for secondary was thinking of throwing in some raspberry juice, may just leave it as it is. Hmmm, wonder what it would taste like aged in an oak barrel?

    Had to look up HDPE and according to wikpedia it's not. Ah well. Yeah I've thought about doing one gallon batches only problem is finding the cider in glass bottles. All I've been finding is plastic jugs.
