    White Labs American Hefeweizen. Transferred to secondary today, looks good. I'll bottle in a week. I'll let you know how it tastes.

    All grain - best route for cheap equipment

    If you have a 6-7 gallon aluminum kettle, go ahead and use it. The effects from alluminum are nill, certainly less than the troubles of having to boil two brew kettles. JMO.

    What type of beer is it? Look at the suggested original gravity (probably a range) of the style you made. If you now know your final gravity, you will be able to figure pretty close to you % alcohol. Of course it won't be exact because you didn't have your original gravity. Or a less...

    Hefe Fermentation

    The hefeweizen I brewed on Wednesday has had a very active fermentation, in fact it filled the airlock twice on thursday. After the second time I attached a 3' blow off tube. I should have done this from the start, as I had a hefe earlier this summer with a very volatile fermentation.

    Five Gallon RIMS

    Most liquor stores will have a tap you can rent. Tap it and let them drain. As Rhoobarb said take them to a fab/machine shop to cut the tops off. If you know a welder they can cut them off with a laser torch, very clean edges.

    Sam75, you may want to keep the brew time and add the grain bill when you and Orrelse brew together. However, Orrelse posted at 9:15pm, so he may have been half way into a case of homebrew. Hence, addition and subtraction become a little fuzzy. :D (whining) You guys get all the cool stuff...

    I used it to formulate an a hefeweizen. What a great program! I hit the numbers perfectly. The true test will be the taste test in a few weeks, but Promash is definitely worth it, and I look forward to improving my brewing with the package.

    What's the difference between Guiness drought and stout? Is one preferrable for making a nice Black and Tan? The Guiness Drought mixed with my homebrew India Pale Ale into 1 dark beer...I drank it anyway, but I didn't have the 2 layers. I used a guiness spoon.

    How much evaporation do you get?

    Hey, Orrelse. The Clone Brews book calls for a 90 minute boils on all recipes. Other books I've read say that 60 minute boils will suffice. Are there advantages to longer boils. As always, Thanks! ;)
