    Trying a 90 min clone

    We did a high IBU IIPA last weekend (95 IBU roughly), extract with grains, and didn't aerate just poured the wort into pre-chilled water for aeration, and pitched a nicely smacked pack of pacman on top. I think the OG was 1.072 if I remember right No problems at all.

    Easy answer : RDWHAHB :) However (and realize, I'm pretty much a neophyte, but have read anything I can get my hands on and this forum religiously nearly every day), next time, make sure the wort is cooler than 80 degrees. Second, I'd bring the fermenter back upstairs or to a warmer place...

    How long for secondary fermentation?

    You're not really "fermenting" in a secondary... it's more for clarifying. With a hefe, clarity isn't much of an issue, but how "vanilla-y" you want it to be should determine how long you leave it in the secondary.

    Three Oxygen tanks for $99. I know nothing about these tanks at the moment, but can tanks be used for other gasses? In other words, can an O2 tank be used for CO2?

    Nothing else? Not even BMC or the ability to make a trip to the nearest store? I guess it would depend on how green. Two weeks bottle conditioned, I say yes. One week.. I dunno.

    RDWHAHB! It's harder to screw up than you think. And rehydrating would be a great idea, though we pitched our dry yeast straight onto the wort of our first beer and had no problems. Have fun!

    Pacman - Almost gone!

    Picked up probably one of the last two packages of Pacman in Illinois today at my LHBS. The shop keeper said he was probably going to buy the last one before he goes home. I'm using mine on my IIPA this weekend. I'd harvested (I think) my Irish Ale yeast from our porter we made two weeks ago...
