    Uh oh. Wild yeast? Infection?

It was a new FerMonster fermenter, so not prior yeast. When I first opened it, it just smelled like wort. I didn't notice any unexpected odors.

    Uh oh. Wild yeast? Infection?

Yes, outside. I put the lid on immediately at flameout and only removed it to stir around the chiller a few times and the whirlpool.

    Uh oh. Wild yeast? Infection?

Not yet. Just brewed it last Saturday. But the yeast is kicking it. Too late to go back now.

    Uh oh. Wild yeast? Infection?

At this point, what's done is done. Might as well ride it out. Worst case I have to drain-pour 50-ish bottles in a few weeks in honor of my poor wallet.

    Uh oh. Wild yeast? Infection?

It would be for me. I can't stand sours. Blecch. 🤮 🤪

    Uh oh. Wild yeast? Infection?

I'll try to get one tomorrow.

    OG was about 1.071

    Uh oh. Wild yeast? Infection?

Could a bacteria create krausen and strong airlock activity in 24-36 hours?

    Uh oh. Wild yeast? Infection?

Yeah, it's my first time with kviek so I went with the manufacturer's recommendation.

    Uh oh. Wild yeast? Infection?

I brewed on Saturday. 5.5 gallons of wort into fermenter at about 5pm. I sent my temp controller to 100F because I cooled it too far and needed to get the temp back up for the Lallemand Voss kviek I am using. But then a family emergency came up before I could pitch the yeast. I just got home on...

    Instructions problem. Help please.

I gotta peek at it. It has a couple of inches of krausen on top and bubbles coming from the blowoff jug.

Adventures in Homebrewing has a 16 gallon on sale for $82. Unfortunately, I'm tapped out. It'll take me months to save up that much. Hobbies during the apocalypse carry a low budget.

Yes, all the mort got in there then topped up with water to 5.25 gallons. Yeast has been pitched. I have a FerMonster with a BrewJacket so I can't see it, though. I may peel down the insulated jacket and take a peek. I'll reply if I do.

Oh, for sure. I mentioned in an earlier comment that I'll never use LME again. This is the first time trying a Two Hearted clone so I just wanted to follow the official Bell's recipe.

I thought about that but I am brewing outside because my wife and daughter complain about the smell. Crazy right? What's wrong with them? :p So with one propane burner (that I just bought) and one 5 gallon pot I do not have other options. I'm going to get a cheap 10 gallon (Bayou Classic or...

I used those exact products and amounts per the official Two Hearted IPA recipe published by Bell's Brewing on their website. https://store.bellsbeer.com/collections/brewing-kits/products/two-hearted-ale-clone-extract-ingredient-kit

    Instructions problem. Help please.

Sure. But a 5 gallon soup pot means I can't do 5 gallon batches. You need at least an 8, 10 is better which is what I'll be getting. I started brewing 1 gallon batches but quickly realized that for me 10 beers it isn't worth the effort.

    Instructions problem. Help please.

I've never used it before. This is only my 3rd batch so I don't have much to compare it to. I did not hear them. I just slow poured with one hand and stirred with the other. Then scooped some hot wort in and swished them around a couple of times. And this will be the last time I monkey around...

    Instructions problem. Help please.

I think going forward I'll just take it from the top and ensure it is a clear sample.

    Instructions problem. Help please.

Hm, I didn't see anything that looked like undissolved DME in the pot. The clumps in the sample looked more like the break proteins. But I guess it could have been some one there. So if there were undissolved DME in the fermenter, what affect will that have? Will it just dissolve and get eaten...
