What went wrong in my first batch?

I also would recomend fermenting in lower temps. I live in FL and have improved my beer greatly since I now ferment in a chest freezer. The swamp cooler works well or check out http://www.coolbrewing.com Only downside to these methods is you have to be around to switch out the ice bottles every...

What went wrong in my first batch?

The more info you give the more we can help. Post your recipe and as much about the brewing & fermenting process as you can (such as boiling details, how long did you ferment for, at what temp, etc).

Seal/Label Generator - An Easy Way to Make Labels

The page has been down for a few weeks...bummer because it seems like all the other "Free Logo" sites on web are geared towards extracting $$$ out of you once you design it.

    Kegging Test Run Question

I am setting up a keg system and was wondering if it possible or worth it to fill a keg up with plain water and just carbonate that first and see how everything works. I have a commercial account for CO, so I am not worried about wasting some gas for a test. I know there might be some line...

    Please help, I screwed up...bad.

I think I've read that hop flavor can mellow out during peak fermentation and that's why people dry hop AFTER peak fermentation. The ginger will prob mellow out also. Just wait and relax and it will most likely be really good.

    Advice Needed for Hitting Gravity

I don't have that book, but maybe it will be my next purchase since I've heard many good things about it. I wasn't aware of the fact that the two solutions have problems mixing. I will take that into consideration from now. I am usually pretty close to what my Hopville says I should be, but it...

    Advice Needed for Hitting Gravity

Most of the brews I have been doing lately are usually between 1.048 and 1.058. So maybe a variation of .002 may not be that bad for these types of OGs, but it sounds like a variation on .005 would be a cause for concern? (and I gently stir with a spoon or paddle when topping off w/ water so...

    Help in identifying off flavor...

I always use bottled spring water and hop bags. My previous batches have come out great and the only thing I did different (besides the ingredients) is try a sample at around day 12-13. Usually I don't sample it until around day 19-20 right before bottling on day 21. So maybe the beer is just...

    Advice Needed for Hitting Gravity

I know, it hurts to dump the samples! Like I said before, I am brewing w/ extract plus grains or partial mashes so those grains have an effect on gravity and I'm sure efficiency is playing a role when you start adding grains to the equation especially w/ the partial mashes. On one of my recent...

Ok, thanks guys! I threw out the cans already but I will look into the alcohol laws.

    Advice Needed for Hitting Gravity

I usually brew extract w/ grains or partial mash and use the Hopville calculator to estimate my OG for 5.5 gal batches. I start testing the OG after I fill the fermenter up to 5.25 gallons and dilute more if my the OG is still too high. I've been pulling out samples to read the OG since the...

    Banana bread beer help!!!

One of my first batches I did a honey wheat and underpitched the yeast and fermented at high temps and the esters were so profound it smelled and tasted like sweet, ripe bananas! It was too much for me, and I like the banana taste that some wheats have, but I think it would have been better if...

    Honey wheat ale

From what I've heard, honey is usually added right before, to right after, flameout while the wort is still hot so it's at least pasteurized. Most people say it will ferment out completely without leaving much flavor behind. So if you want honey flavor, honey malt can add a type of honey essence...

    Help in identifying off flavor...

It was the Nottingham that comes w/ the kit. It was no where close to the expiration date and the gravity has dropped to finishing levels.

    Help in identifying off flavor...

All my recent batches have been turning out great. I usually use put together my own recipes with help from the "Brewing Classics Styles" book. I usually do extract w/ grains or partial mash brews. Since we now carry Homebrew supplies where I work I brewed a Brewer's Best Red Ale kit about 12-13...

    NB Cream Ale kit ingredients?

I've heard a lot of people say the Northern Brewer Cream Ale kit is very good. Does anyone have the ingredients list from the kit so I replicate it on my own?

    Added too much water!

Not much you can do about it now except wait. I've heard that when bottling, priming with DME instead of corn sugar will add a little more body which may help some, but I've only ever used corn sugar so I'm not sure if that will help or not...
