Og to high. can i top up with water?

If there is room for water in fermenter then adding water shouldn't hurt. If it's still above 1.060 then you will just have a stronger beer. The choice is yours. Sent from my iPhone using Home Brew

Straining wort while pouring into fermenting bucket?

I have used a straining bag a couple times, I did sanitize it prior to use. To keep it from falling in I just wrapped a tie down strap around the bucket and bag. Issue I had found is that you have to go slow as it will clog up and can get VERY messy.

    food coloring in beer?

Every bar I have been to on St. Pattys adds food coloring.. I dont see an issue with it, Personally I wouldn't do the entire batch I would color each serving individually (I dont color my beer at all or drink it on St Pats colored) but to each his own I suppose. I am sure someone else will have...

    which quick disconnect

I recently was shopping around for QDs and decided on the Cam lock style over the Poly (I had bought 2 sets of the poly prior to actually making my decision). Cam locks are less expensive then most from my research and highly recommended to me from a few other brewers.
