    Spicy notes from WLP039 Nottingham?

I brewed a batch of Scottish 80 back in Feb... and went into cold storage around Mar 18. It took a while for the green aroma and taste to meld out. Just cracked one open tonight to test out, and am getting spice notes coming through. Now.... the beer is still about a few more weeks (maybe a...

BIAB efficiency question - 71% good? bad?

+1 to all who stated that consistency is more important than efficiency. I've been an avid BIABer for the last 5 months.... having close to 12 beers with this method under my belt. No sparge used on this end, and consistently hit between 74-75% efficiency. Fine crush, stirring about every 10...

    Gluten Free Brewing Observations

There are many things you can add to your gluten-free brews to give them a little more flavor capacity. Flaked oats can be thrown in for body and creaminess, and the use of honey and belgian candi syrups can add flavor and color!

    Bottle Priming With DME??

Yep.. boiled it just like I would with dextrose. And it was an extract kit... which probably added to the fact that I was able to pick it out easily. While the beer was drinkable, IMO it completely ruined the IPA experience. I recently had a bottle of Lakefront Bridge Burner, and was able to...

Fermenting lagers with ale yeast at true ale temps??

And yeah Airborne... I've never been good with those kinds of people... and the more distance I can put between me and them is good. Course, my problem is that I've never been good at being told I can't do something. Not that I shouldn't do it, just that the thing I want to do can't be done. lol

Fermenting lagers with ale yeast at true ale temps??

Bos... the quality that attracts me to lagers... especially maibocks is (1) the maltiness, and (2) the clean malty taste. Actually, that second part goes for all lagers (with mass-produced big three yellow piss being the exception). I guess... my overall goal, while being extremely lofty and...

Fermenting lagers with ale yeast at true ale temps??

Thanks guys! I knew there were people out there that had to have tried it... but couldn't find you! lol As a fairly new(ish) brewer, I have close to 12 beers under my belt so far. I took the transition to all-grain via BIAB, and ever since then, I've just been finding utter lambasting on the...

Fermenting lagers with ale yeast at true ale temps??

I'm hoping I can find some good replies to this thread. From what I've been able to find on this subject... a lot of what I read is speculation and not true attempts. I'm wanting to find if it is possible, in any way shape or form, with whatever yeast out there... to make an ale that's as close...

Do you squeeze the bag -BIAB

Resurrecting a dead post! Yes... squeeze squeeze squeeze the bag! And I'm not sure why I'm reading that a lot of people are sparging in a BIAB session. If you're sparging.. you're not BIABing. The BIAB method takes the mash tun, HLT, and boil vessel and combines them into one pot. To better...

    Honeysuckle Bier

Well, the honeysuckle wine turned out fabulous. The aroma, taste, and essence are all there. While I was in the process of getting everything ordered to do my experiment... all my plants are no longer with blossoms. It seems that the season has passed for them, so I have no other option than to...

    Bottle Priming With DME??

I am so hoping that someone will reply to this post, since this thread is about a year old. I brewed up a batch of IPA (second batch, same recipe), and decided off-hand to prime with DME.. since I heard so many wonderful things about it (smaller, crisper bubbles... added head retention...

    Honeysuckle Bier

I found this forum on honeysuckle beer (ale) just from a quick google search, and I, too, am curious to see how anyone's foray into this type of beer went. I've made honeysuckle wine, and while it's still in a tertiary carboy finishing up batch aging, it smells and tastes wonderful. I figured...
