    Stir Plate Speed Control

    I added some series resistance to get a speed range that was usable. The stir bar is 1", I have 2l flask, hard drive magnets on a washer, and a 12v supply. My range of speed is limited but it doesn't matter much to me.

    Why does my stir magnet fly to the side of the flask?

    Close the clearance as much as possible. You can also try to add more magnets. Try slowing it down. For mine I had to add between 100 to 200 ohms in series with my rheostat. I forgot what my input voltage is.

    I put mine in a homer bucket of star San. It removed the oxides and sanitizes. Plus I don't like that it stops the boil if I add it then.

    Why Ferment?

    My guess is that fermentation is cheaper. Ingredients don't require too much processing. Treatment, handling etc is tried and true. Nothing special about shipping and logistics. Synthesizing the compounds that make up a beer might not be easier, quicker, or cheaper than fermentation.

    Kolsch Lagering, to rack or not to rack?

    I'm confused by a lagered kölsch. It's an ale so wouldn't you be cold crashing it which would stop the yeast from cleaning up?

    I've always liked "fancier" beer. Even as a kid I was trying to get someone to buy me Michelob dark instead of more typical BMC. I especially loved German beers. But I have yet to drink a Belgian beer that I liked.
