    I can't disagree more with this ^ At this point, the rhizomes have put out larger main roots and fine feeder roots. Removing them from the soil will damage these and destroy any progress that the plants made over the season. As long as your winters aren't too extreme, just keep them in pots...

    It might be fine in the bag - or - they might start to mold. There are a lot of factors: ambient humidity, airflow, how packed it is, etc... Laying them out in single layer would be more foolproof. Do you have any spare widow screens? A single layer on an elevated screen would be even better...
