    Finally! 1st AG

I did the Haus Pale for my first AG as well. I also didn't put Irish Moss in there, but I did use gelatin and cold crashing when it went into the secondary. My beer was crystal clear! Also, congrats on taking a big step towards throwing your money and time away!! Hehe, at least that's what my...

    9-9-9

Yeah, I'm definitely in as well. Guess I have 8 months to get my lagering equipment.....as if I actually needed another excuse.

    Noy much krausen

I've found that now that I am making starters for my liquid yeast, I get a massive krausen that I didn't see before. Maybe pitching rate affects this?

Who's brewing 08-08-08 RIS? Post your notes here!

Mine's been sitting steady at 1.024 for the past couple of days. I think I'll rack to secondary tomorrow. With this crazy big of a beer, I was expecting more than an 8% abv, but this'll make a much more drinkable beer.

    Low profile airlock?

What about a piece of Tyvek? It allows air out, but not in. And best of all, you can get it free at the post office (1st class envelopes)

    Irish Stout Ó Flannagáin Standard

Yeah, mine's been in bottles for a week and already tastes great. Still needs a few weeks, but there's that great coffee roastiness there, but not overly roasty like a lot of homebrew Stouts that I've tried. I think this will be a recipe that I tweak and keep around for a long time.

Who's brewing 08-08-08 RIS? Post your notes here!

Well, just finished cleaning up after my 8-8-8 Brewday. Ended up with 5.5 gallons at 1.82. Not dead on, but I'm happy with it. That sure was a long day!!!

    Brewers tend to be cooks

I also am a classically trained Chef, who has gotten sick of cooking as a career. I do enjoy the food business, and have started parlaying my restaurant knowledge into more of an office job. Brewing for me, is a sort of extension of cooking, that is heavier on the science side than general...

What cotainer to use for yeast starter?

I'm new to starters, but I am using a growler from the local brewery. Also, I am using foil over the top for the first time on this starter, and I can see a big improvement over the previous two starters where I used an airlock.

    draining speed

I use the 10gal gott cooler and ss braid as well. I have limited experience with it, but run at full speed without issues.

    One gallon brews..

I just did a 3 gallon AG batch. It sure was nice doing it inside when it's 15degrees outside. Also, as I am new to All Grain as well, it's nice being able to practice and hone my technique without wasting a 5gallon batch! I see many more 3gal or even 2 gallon batches in my future.

    Man, I love Apfelwein

Man was Apflewein a hit at New Years last night! A little 7up in the mix, and everyone was pretty druck before 10pm. Good stuff! Ok....back to the hot wash cloth on the head.....

    Possible Infection??

Ah, Irish Moss.....First time ever using it, and both of these beers had probably an excess. I also thought it looked a lot like the trub usually left at the bottom of my primary after racking, but the floating was scaring me!

    Possible Infection??

Well, here's pics of my Brown Nut that I uncovered and found the same thing. This beer is not even 2weeks old. Man, time to switch out all of my tubing and crap or what?? I dunno, I think I'm careful with sanitation?!? Pic 1 Pic 2

    Possible Infection??

Yeah, I tasted and went ahead and bottled already. It tasted great! So, we'll see if something strange turns up in my bottles here in a couple of weeks. I wonder if it has anything to do with my fermentors being on a cold concrete basement floor. Yeast floating to the top where it's warmer?? I'm...

    Possible Infection??

Thanks Superior. I don't know why I wasn't able to post them? I've posted pics before without issue.

Sorry, but I need to bump this. Any ideas??

    Possible Infection??

Just about to bottle my Stout, and after taking the lid off, I found some serious stuff floating on the top of my beer. It's been done fermenting for over a week, and it's not really soft like krausen, but more like hard protein rafts. Here's a link to the pictures. For some reason I can't get...
