    Check/calibrate your thermometer to make sure your at your target temps. Or if your lazy like me, just mash at slightly lower temperature 149-151 and see if it makes a difference. I got one of my thermometers a bit hot and now it reads about 7 degrees hot. This could have caused some issues...

    Should I bottle this now or not?

    Racking from one carboy to another, but splashing the cider/wine/beer into the receiving container. This should help dissipate the gases currently in solution, but could lead to oxidizing if too aggressive.

    No your beer is not ruined. Go to your local health food store and pick up some "dextrose" (Corn Sugar) to replace the 4 oz you'll need come bottling time. My local health food store sells corn sugar for $1.19/lb. which is much cheaper than any LHBS I've seen.
