    Straining.

    Does anyone use any type of straining material when they rack? I'm looking for something with a tight enough weave to strain out the lees. After someone else mentioned it I was thinking I might be able to make a bucket equivalent of a french press to help with cutting down on loss when racking.

    (modified) JAOM not "orange-y" enough

    You might want to peel & chop up 4 or 5 oranges and add them to the secondary. Just make sure you are getting as little of the pith as possible.

    If it's bubbling then it's fermenting. I would recommend getting a hydrometer so you know when it has stopped fermenting.

    Not sure if this is an issue

    You might want to give it a stir to degas the mead and take the opportunity to clean the air lock at the same time. My 2 & 4 year old think I'm a magician when I run a stirrer around a fermenting bucket and it suddenly foams up like it's a mug of root beer.

    Also make sure you are pulling out a sample and sniffing it from a glass. I've had that smell when sniffing from a 1 gallon carboy because of the stopper but the mead itself smells fine in the glass.

    Please let us know how it works in the crock pot. I'm thinking about doing a bochet as my next test batch and I'm curious how the low/slow approach works against higher/faster.

    JAOM Question.

    I wish I had seen yours before I started my 2 batches. Lessons learned from first batches of JOAM - Cut the fruit into smaller pieces. Fishing large slices of orange out of the bottle was a pain.

    Not sure who else lives in the mid west but there were a TON of tornadoes touching down here. With all that going down I STILL couldn't convince my wife that my mead constituted emergency supplies.

    Strawberry mead procedure

    I would recommend just chopping the strawberries into halves or quarters. You don't want to crush too many of the seeds as that might give you some off flavors and it will be a lot less likely to haze the finished mead.

    Thanks RoadKill. I've been digging around trying to find info on how much head space is too much. I have a couple of batches of JAOM that should be ready in a week or two but since everything is in 1 gallon sizes I was trying to figure out how to handle the extra space after removing the lees...

    It smells.... pretty bad

    I'm guessing 'Splash Racking' means letting it splash and aerate when moving from one rack to another in order to degass the mead and let out the hydrogen sulfide gas that is making it smell so bad.

    It may be possible that your honey is settling out is it wasn't combined completely with the water. I had that problem with my first batch of JAOM.
