Anyone aspiring to open a brewery?

I plan to open a brewery as soon as I retire from my next career as starting shortstop for the Cubs. I just hope my new wife, Kate Upton, won't mind me working so much.

    Cigar City Jai Alai Clone

Any thoughts on when to dry hop? The standard after fermentation or during fermentation NE IPA style? Brewed this a few days ago and fermentation is just starting to die down. To me, Jai Alai seems to be a bit of a cross between a west coast and a NE style IPA.

    Brewing/racking/bottling with a cold?

About 60% ... you'll need an IQPA for that (imperial quadruple IPA). The good news is cold and flu viruses don't survive more than a few hours outside the body (depending on the surface, temperature, humidity etc). So I think the risk of getting infected with a virus from a beer is really...

Has your body's reaction to beer changed over the years?

I haven't noticed much change over the years. My body still reacts the same way -- I get better looking and can dance better.

First brew done, yummy, why the hangover?

Before you get too alarmed, you know it's possible you have a brain tumor or something ... and your beer is perfectly fine!

    Would this recipe work?

6 lb of dry malt extract is equal to 7.5 lb liquid. So yes, you could sub your 8 lb of pilsner LME; your beer will just be a slightly higher gravity but no enough to worry about, at least in my opinion. First wort hopping means you add the hop addition to the wort after you mash but before...

    Beer Fest Prices

Went to one in Asheville NC last weekend. $57 for 4 hours. They had 35 or so breweries, almost all local ranging form very small micros to Sierra Nevada and Stone. Price also included a meal and there were a couple of bands. I can't drink 50 bucks worth of beer in 4 hours* but getting to taste...

Help me go all-grain for $100

I was in a similar situation. Was doing extract with a 10-gallon aluminum pot. I got some 5 gallon paint strainer bags (about $2 each) and 25 feet of 3/8 copper tubing for a homemade immersion chiller ($40 maybe?) and I was good to go for BIAB. Still using the same setup.

    Quick Turnaround kit or recipe?

My impression was that rapid cooling soon after the boil encourages more cold break formation and that decreases chill haze. Is that not the case? (I realize there are other ways to decrease chill haze and some people don't care about haze at all)

    Improving an extract brew kit?

First thing I would do is use a different yeast. Wyeast 1332 (Norhtwest ale) or 1056 (American ale) would be good. S-05 if you want dry yeast. Second thing ... more hops. Maybe another 1 oz of Willamette and 1 oz of Mt. Hood at 5 minutes or so. Finally I would bump up the OG a bit, maybe a...

Wow, lots of my favorite breweries there ... even Blackberry Farms. If it were a little closer than 2000 miles to San Diego, I'd be there.

    Brulosophy Grain Crush Comparison

A couple of years ago they did a big stout and compared 1 mm and 0.5 mm gap settings. It made a difference in OG (1.080 vs 1.090) and not surprisingly, the final beer.
