    With patience and dedication you would be surprised what you can accomplish. More seriously, how about brewing smaller batches? If you have a bunch of 5 gallon kegs that might not work for you but you could get a few smaller kegs or even ... shudder .... bottle.

    Unfortunately they are closing down; what little inventory left is 60% off. They are planning on still selling large equipment like Blichman, Grainfather but they are getting out of the ingredient business.

    Affordable kegs and co2 tanks

    kegconnection has used pin-lock kegs for $35 right now. I've got several kegs from them and they are awesome. Shipping was quick and reasonable to East Tennessee, so probably similar to Eastern NC.

    Water quality

    The OP indicated they have a reverse osmosis water softener. This does not add salt like the other common method of water softening, ion exchange. But it might be good to double check this to make sure which process they actually have.
