Have you thought about making an offer on the property? I'd be worried in a few years his kids inherit the property and sell it and you end up surrounded by a few hundred houses or something. Just a thought.
Assuming nothing else has changed (yeast, recipe, temperature, process) it might. Calcium and pH both effect yeast flocculation. So, for example, if your current water is much lower in Ca2+ compared to before, you could get less yeast flocculation.
I sometimes get a "harsh" hoppy aftertaste, almost a "burn" (for lack of a better description) right after adding a lot of dry hops. It goes away in a few days.
I would not expect that at the low hop levels you used, but in a delicate pils maybe? If so, I bet it goes away.

Turns out the fuel filter housing was leaking, allowing air into the fuel. They said cold fuel is more viscous than hot fuel so an early sign is it's hard to start when the engine is hot, compared to cold.
