Yes freezing will generally not kill it all off. Wash your strawberries well as part of your preparation and that should remove most of the natural yeast and bacteria. Don't use any bruised or otherwise damaged fruit as the cultures have likely penetrated to the interior of the fruit. However...

I've had a batch sitting on my kitchen counter for a couple of weeks now. I suppose it's about ready to start digging into. My wife has stopped complaining about the smell, at least.

I also use Kingsford with my WSM in addition to the wood chunks for smoke. The WSM can be tricky to control temps in windy conditions if you don't specifically build some kind of wind break and/or insulation for it, but apart from that I find it very easy to keep at steady temps.

I'm not sure how you have user accounts and related settings (e.g. environment variables) configured on your system, but the default install location for Steam (or really any application) on a normal Windows 7/8/10 setup is definitely not on the desktop.
