    That may have accounted for some of the rapid fermentation at first, and you may have some different flavors, but it's not enough to stop fermentation completely. Since so much of the sugar was consumed initially, it may explaining it slowing sooner than normal, but it's still chugging along.

    Just because the airlock isn't bubbling, it doesn't mean it's not fermenting. You're fine. Let it ride.

    Regardless if you get a kit or parts, you will inevitably change stuff up and want more and different tools as you figure it out. A kit simplifies starting out, but you will continue to shop regardless.

    Once there is alcohol in the fermenter, you need to convert from Brix to get an OG reading from a refractometer. http://www.northernbrewer.com/learn/resources/refractometer-calculator/ Also, why would you pull a sample on the second day?
