    English Brown or Mild is probably the best way to go. if you're rushing, you probably don't have time to make a starter, so double or triple up on yeast a kegging system will help because you can force carbonate.

    i ordered Designing Great Beers on sunday and i've been checking the mail expectantly every day this week. i ordered "Principles of Brewing Science" along with it, which should be very informative but very technical.

    Blow-off tube caution

    one disadvantage to using vodka that i've discovered is you can't smell the beer as much! i enjoy walking by my carboy and putting my nose to the top of the airlock and smelling yeast, hops and malt - when i use vodka, all i can smell is alcohol.
