    Swing tops didn't carb!?

    I checked the seal when closing and they seem to squeeze down tightly. I was thinking that I didn't properly wash the brand new bottles. I assumed that because they're new all I needed to do was rinse them, then Star-San them and bottle. Could they have been coated with something from the factory?

    You steep the grains first sparge if you want. Brandon's recipe calls for 3/4 gallon of water for the steep and a quart for the sparge. Then heat your water to a boil, remove from heat and add the LME, get that well dissolved and boil.

    Oktoberfest Kit Modification

    Daughter gave me a True Brew Oktoberfest kit for my birthday. I would like to modify the recipe somewhat to get a higher gravity, finishing it off at about 5 to 6% ABV and add a bit more hop forward flavor and bitterness. Any suggestions?
