    Grilled Octopus

    Grilled some baby octopi done in a Thai marinade last weekend. Delicious.

    Made some Feta

    Local creamery, one of my suppliers, uses a brine at 20% salinity with a pH of 4.5 to 4.8. Seems to last forever, getting tastier (to me) with age. Hope you find this helpful.

    What to cold smoke?

    Bacon. Cure a pork belly, cold smoke it for 12 hours, then put it over hot smoke til it reaches 165º. You'll be amazed.
