It's been Years since I had such a treat. Family would drive to MN every summer when I was a kid. We'd bring home tons of perch for the freezer, with some walleyes if we were lucky, on top of what we ate up there. And I always got some Schmidt's cans for my collection.

Turned out some bad-assed brats. Neglected to tell my guy to add the ice water (will likely use iced beer), but the flavor was spot-on. Kinda threw all the people that sampled for a loop. The guy from Wisconsin wanted to buy some.

Nice. I find that chicken thighs, in a whatever sausage, work with pork fat ground in, at about 20%. And crew is definitely helpful.

Just caught a CDB "Uneasy Rider" followed by the Dead's "Mama Tried" on the radio. Switching to cheap beer and tequila.

Made a couple tweaks: subd mace for the nutmeg, backed off the sage & rosemary & cayenne, added some dry milk powder. Links look fantastic. Will cook tomorrow and post results.

Glad to hear they're making some good beer. Their core stuff is in the grocery stores down here in NC at premium price. Lol. In college we bought returnable Leine's for 12 $ a case.

Wicked Weed Rootin Saison. Parsnips and jicama in the mash. Some earthy funk with an, I don't know, earthy flavor. These guys roll pn the "out there" side. Tried a beet beer today that looked all the world like a strawberry soda, but smelled and tasted like a nice hoppy pale.

Sounds good. Will try tomorrow.

Anyone care to share one, from scratch, not a pre-packaged mix from Sausage Maker or another?
