    Horrer story: At work, put 6 cured out pork bellies in the smoker (makin' bacon) at 150º for 18 hours, per my usual. Someone monkeyd with the settings, putting the hold temp at 385º instead of 150º. Ran for about 2 hrs. Hammered. Almost cried. Gotta trim all outside edges, except the fat...

    Allagash Curieux. Nice complexity. Malt and hops are there, competing well with the oak and vague bourbon flavors (vanilla?). Two thumbs up. Maybe 3 by the time I finish this.

    My tun in a cooler has a slotted 3/8" PVC box around the perimeter with 2 arms running down the middle. Works well for me, but should I make improvements?
