Another "My first cider" post - likely more problematic than most

Wow... 15% from S-04? I was just going by what I found searching around for data from it. Maybe it will take him as far as he needs to go without having to re-pitch a different yeast. Definately interested in what happens now.

    Standard Hard Cider Recipe?

@Cameron: What recipe did you use? And define nasty... dry and tart are how most ciders are going to ferment out. If you want a sweeter cider, back sweeten or use a yeast and enough sugar where you will get residual sugar. @Seabass: Make sure you don't push your yeast to the point of getting...

    Standard Hard Cider Recipe?

Traditional cider is just the juice and yeast. Just a quick note on the 1 lb of sugar to 1 gallon of juice... this is going to give you closer to an apple wine. I've done it a couple times with DV-10 and it has fermented dry to around 12%. Another option would to be bumping the SG with some...

Another "My first cider" post - likely more problematic than most

If you start at a normal SG (1.06ish) and end around 1.01ish you'll have a sweet cider that is around 6.5%. If you start at 1.04 and end at 1.01, it should be sweet and around 4%. Last time I measured straight apple juice though it was in the 1.06 range though. Your 3 gallons to 1 1/2 cups...

    wyders pear cider recipe needed

I've had their pear cider before, so I'm semi-familiar with it. I've just stuck with making regular apple ciders, but pear should be about the same. Not sure what the SG of pear juice is, but I'm thinking 5 gallons pear juice (no preservatives... ascorbic acid/vitamin C are fine) should put you...

Another "My first cider" post - likely more problematic than most

He said he accidentally added to much sugar. From what I've gathered though S-04 poops out around 8.5%. That means that it would finish up with a gravity around 1.17. Still super sweet. I've made a couple ciders/apple wines before that I've done 1 gal apple juice to 1 lb of sugar and had it...

    Hello from Cali

I've been trolling enough to pick that all up. Haven't freaked out about a brew yet. Picked up a hydrometer a few batches ago, so I can finally check the gravity. The first few everyone was asking me... "What's the alcohol?" The response... "Who knows... just drink it and enjoy". Definately...

    Hello from Cali

Hey all - Been trolling around here for a while now. Figured I might as well take the 2 minutes and register. Got the bug in late 2009 while reading a book. Fictional book, but they were talking about a brewery they had built and were brewing their own beer and mead. I've always been a...
