    Soldering anything to the skirt would be a bad idea in a direct fired kettle. It is largely disconnected from the thermal system within the kettle and will get inferno hot.

    You could use 2 2500watt 240V elements and use a separate simmerstat for each element. I think bargainfittings has a thread somewhere on here where he uses 3 stove elements on one pot with each having its own simmerstat. You'd do the same thing except your elements would be immersed.

    You can make a 10gal batch in a 15gal kettle and a 5gal batch in an 8gal kettle. A 10gal kettle really doesn't help much in the world of multiples of 5gal brewing....

    This is pretty much exactly what I do. You'll be cooling a very small space so the heat generated by the ac unit will be peanuts compared to the sun heating your south facing walls to 100+ degrees :D If you have a swamp cooler, that hot air will get pushed out of your apartment anyway...

    I built the cooled chamber in my signature to solve our issues :) You could use a large cardboard box if you're just trying to maintain 60F with the unit you posted. Really though those are the same thing as a window AC....

    Opinions... rubber washers in contact w/hot wort...

    I use hardware store rubber washers on my mlt and haven't had any issues at all.
