    Bigfoot > Hoptimum

Hoptimum finally made it to Texas and I picked up a couple of four packs today! I also had the chance of trying the 2012 Bigfoot. To me the Bigfoot was pretty tasty out of the bottle. Strong bitterness, very clean and dry finish. My one complaint with it is that the alcohol bite was pretty...

    Absinthe barrel IPA?

According to wikipedia, its 10mg/kg in the US, 35mg/kg in the EU. St. George is an American maker that I absolutely love. And yes, my best description for the effect is feeling very awake but thinking intoxicated things :)

    Absinthe barrel IPA?

Here is the deal with absinthe, as it is one of my favorite drinks other than beer :) True absinthe contains a variety of wormwood that contains a chemical called thujone. Back in the early 1900s when absinthe was banned in the US, it was thought that this chemical caused hallucinations but it...

    Getting discouraged

Adding fruit, especially something like watermelon will increase the volume of water in the wort and often not make up the difference with added sugars or mouthfeel. Could be a reason for it drying out or being low fg wise.

A Kegerator that "Goes to Eleven"?

Absolutely love those. I probably have some old el34 power tubes laying around here somewhere.

Can you have too much foam (starsan) in bottling?

I wouldn't worry about it. Supposedly Starsan breaks down into nutrient and in correct concentrations shouldn't harm anything. I typically rack on top of foam in cornies and bottles and have yet to notice any problems, even in paler beers.

    Should the madness begin?

While I'm not positive about this, wouldn't the steam be piped in from a separate boiler for that type of unit? Looks like the box with the crank would be for gearing etc. Unless its ruptured, could be worth something

You are the pro, tell me what to buy!

I don't think steering a new brewer in the right direction is OT. As far as answering the question, there are a lot of ways to go. I also agree with going with an extract or mini-mash option at first to allow you to focus on the very basics. My biggest complaint from my original kit was not...

You are the pro, tell me what to buy!

No, rising costs of beer to mitigate the cost of purposely stolen kegs is more like it. They cant feasibly charge 120 bucks for a deposit without damaging sales. There is a huge difference between accidentally destroying a keg than purposely destroying three...

    Once again, illegal.

    Persimmon

Nope! I actually mean Texas persimmon. Diospyros virginiana is the American version. Diospyros texana is the Texas specific one. Has black fruit that is super sweet and a bit tannic. http://farm5.staticflickr.com/4097/4870604554_76a8659f6c_b.jpg

I have a Texas persimmon mead still in the secondary. Pretty sweet but so far so good.

    best beer bars in Austin

+1 Draught House. Not Alamo Drafthouse mind you although that is a good place for drinking and movies. A new place that I've been meaning to visit is The Brew Exchange. Has a ticker that goes up and down with popularity. http://brewexchangeaustin.com/ Lots of other microbreweries but they...

    Store bought Honey

The problem comes when a packer buys "pure honey" from an outside source without actually verifying contents. As far as the packer knows, its pure, and will keep labeling it as such. The FDA apparently checks about 2% of the total honey imports to verify source or contents. Not really very...

    Store bought Honey

As a quick note, unless a honey is from a legitimate local source, chances are most of the stuff you get in the store has been highly filtered and or cut with something besides honey. There has been a lot of problems with imports of super cheap "honey" from unverifiable origins. In these cases...

    Beekeeping Resources

I manage both top bars and Lang hives. Each have their own pros and cons. It is easier to extract honey from a top bar in that you don't need a lot of equipment such as an extractor. Here in Texas we have had a few more issues with the comb stability in the heat. As far as resources for...

    Boiled hops in my primary

I transfer everything into the fermenter and don't use a hop bag at all. The hops settle fine and I have yet to see any make it to the beer after racking. Mind you this will not work if using a plate or cf chiller. No worries!
