    I might just do that. My folks are on The Island :-) Interesting points to consider from all. I like the idea of simplfying it (DME) but I want to have a bit of character. Time to think some more. Meanwhile, I do believe I'll have a beer.

    I've made Cheezefood's CCA a couple of times. It's *very* clean & caramley (is that a word?) with a very light hops profile. I've got a couple of friends who can't stand hops at all & they *love* this beer. I strongly suggest you try it

    First Big Brew Day

    Wyeast 3638. It may be a tad high, yes. But I've set up a swamp cooler on it & it should get down & hover around 68-70 with that. I may crack a window for a bit to adjust the room down. It's in the mechanicals room in the basement which tends to run a tad warm due to the dehumidifier.
