"The Rebel Brewer" is the shipping address. I think that combined with my wife writing fragile all over the box might have had something to do with it. I figure next time I'll just put the addy on and leave anything that says brew on it out of the shipping address.
Trying to enter the Music City Brewfest in TN but my package was intercepted and returned. Shipped via UPS didn't know this was a problem. Arghh how the hell do I get my beer there, I already paid the entry fee.

I have some apfelwein fermenting away and after tasting Ephemere again recently, I thought it had a distinct apple wine flavor. I was thinking about blending a portion of the apfelwein in with the finished beer at bottling.
Anyone have an idea of a recipe for a base beer? Maybe some pilsner...
Only thing I might change is to add just a touch more acidulated malt, gravity came out high and ended up around 7% alcohol but you can't even tell. I could still drink beer after beer of this.
I'd say they have that noble hop taste with a little citrus twang, they would be really interesting to blend with Hallertau Saaz or Vangaurd and maybe hit with Sorachi Ace or something to bring the citrus out.
