    I typically do ~ 40 psi for 24 hours then adjust to the pressure recommended by the tables. If you are a fan (or at least don't dislike) the Brulosphy guys, they have a post on carbonation. Good luck!

    I concur with RocketBrewer. Try some! I've never had a keg last that long but I once tried a bottled wheat beer that was well over a year old and it was great. An average wheat beer isn't a style that should have aged well but it was still very drinkable.
