    Lets play fill in the missing information.... My guess I just racked my black ipa onto 1 gallon of starsan. If that is the case, no I would not drink it.

    If it is a starch haze you need a longer mash rest, do a starch conversion test before you lauter if it show positive for starch you are not done converting and need to leave it longer.

    I would go 4 and 4 with the last week of the bottle conditioning being under refrigeration to force everything in the bottle to settle and to get the co2 into solution so it is nicely carbed for serving.

    Great looking system, I love the idea of filtering prior to kegging to help clear things up and have less sediment in the keg (much easier to transport for a party etc). One question though how much liquid are you losing in the filter housings?

    I don't think that a vacuum boosted boil will do as much to sanitize the wort and remove SMS (DMS precursor) from the wort. There are a lot of complex chemical reactions that are taking place during the boil that boiling at a lower temperature will change.

    So who's brewing this weekend?

    Doing my first batch of all grain today, Jamil's Evil Twin. Everything seems to be on track do far. I have about 5 minutes left in the mash then it is time to sparge, easy stuff so far.

    CO2 "Blanket" in secondary

    Rig a blowoff tube from primary to a jar equipped with a cap with two tubes; one for the blowoff, and one for a secondary tube going to the second carboy. the CO2 produced from primary will fill the second carboy with CO2 you are already producing without any of the mess from the blowoff tube.

    O-ring on sight tube brush

    Is it the o-ring that seals the top hex cap screw on the dip tube? I have pulled mine out several times cleaning it with the brush.

    My understanding of this concurs with the advise for Jamil, you need the liquid in the kettle turning over. This allows DMS to boil off with minimal caramelizing of the wort.
