    I've only done about 6 batches, but everything I end up with tastes like great beer! I don't use any filtration at all, but the water in Idaho doesn't have a bad reputation unless you live in some really alkaline areas.

    Put it in bed with you! Kidding, but it shouldn't be a problem. Most likely it will just start the fermentation again when it comes up to temperature. As I understand it, the temperature extremes to avoid are those on the high end. Low temperatures will just stall out the fermentation for a bit.
