My final update on this thread. Thank you all. It tastes a bit sweeter than expected. I don't think the ABV is where I wanted it. Yet, none of that matters. The wife likes it and says I can keep brewing. Oh, and only 2 weeks in bottles.

You think it's nerve racking now? Try meads. :p That's actually where I started. Beer has more little things going on, but the results are generally faster.
