Been a week now since first rack the haze is clearing up nicely and some extra flavour coming out. Still a bit rocket fuel / over winey taste but it's mellowed a bit and I'm happy with its progress I'm using this as a learning brew before moving onto something bolder.

One gallon of orange vanilla and thyme and One gallon of strawberry and raspberry and star anise 653.25+2=655.25

Pretty sure you should wait until after bubbles stop before racking, I'm still a newbie myself so might be mistaken but better to wait until after primary fermentation is over before moving forward.

One gallon batch this is for but easily adaptable for a 3 or 5 gallon I should think
