    Soaking them will ruin them. I've been through about 5 in two years. If it still reads the temps you need I wouldn't replace it though. I use the horizontal type so there's no good way to keep it out of the water when the temps are really hot and I absolutely need to use a makeshift swamp cooler.

    That could be the case but I mill my grain at the LHBS so I don't think its that consistent - I always get the mud though.

    Can you tell us some more about the second brew? Its really hard to imagine efficiency that low - even steeping I would expect 60%. Is it possible that you were off on the volume or something like that? I see, for example, that you added up t 1 gallon more water in the mash.

    I would go higher than 65 with the WLP400. BM is right on that 68 is a minimum for that yeast if you want it to be active. With the Wit yeast I would go 68 for the first 24-36 hours then let it ramp up to the low (or even mid-high) 70s to finish out and attenuate fully. I do see that the...

    Have you tasted it? Unless you mean March of 2007 then I wouldn't expect there to be a problem at this point.
